Carne en Baho

Here, mainly in photos, is the story of our neighbor preparing carne en baho, a traditional Nicaragua dish.

 A couple of days ago our next door neighbors posted a sign announcing that on Sunday they would be selling carne en Boho for 65 cordobas a plate, about $1.50. We asked about the dish and were told that Carolina would start cooking Saturday night and that it would be ready at noon on Sunday.


Carolina started by lining a big pot with banana leaves. At the very bottom she put in stems from the leaves to make a space for water.

 The ingredients are added in layers: yucca, green and ripe bananas, salted beef, tomatoes, onions, chiles, and garlic.

 Carolina's husband, Francisco, lifts the pot onto the fire where it will steam all night.

 The next morning, it was still steaming away.

 Right at noon, Carolina started serving it up.

It is an amazing meal! Salty and a little sweet. The meat just falls apart. There is a lot of starch, but soaked with all the flavors. Yeah, I ate this whole pate.
